Snow bunny alert

Today was a much better day at school, kinda gave me hope! One of my kids made me laugh when she made the comment, "Dang Abraham Lincoln was CUUUUTE as a boy!" We were researching heroes and that is who she chose.

I have been busy writing sub plans and getting things ready for my trip to Colorado next week! I am leaving Wednesday morning at 7 AM and heading to Denver. I will stay there for one night and then head to the Ritz Carlton at Beaver Creek! My last trip skiing wasn't too great. I think i "pizza'ed" down the whole mountain or stayed on the "practice snow pile." We shall see what this trip brings! I am going with my wonderful boyfriend, Wes. He has a work meetings all day on Tuesday and 1 in the morning on Thursday. Therefore, we get a trip to Colorado, paid for by his company, at least most of it! I am very excited!

Here is a picture of us at 1 of the 8 weddings we went to last summer!

MAT or GRE?

Here is a picture of my little rascals that I do get to enjoy sometimes....

Here is a picture of them at our Christmas party.....

You can't see them all, but there is a total of 18 kids, all trying to get in the picture, not realizing that the closer they get to me, the less kids there will be in the picture. So they keep inching up every second.

So today, I was wondering what should I do?? I am currently considering going back to school to get my masters in counseling. I have awhile to decide so I am in no rush. I need to pray about this and see what God's will for my life is. Jeremiah 29:11, my favorite verse, God knows the plans He has for me. I just need to figure out what His plans for me are. Who knows, maybe I am just where I need to be, maybe it will be better next year. Pray for me is all I can say..............

3 Arrows and 2 lines

Our pastor is currently speaking on the end of times. He has used 5 post-its to explain it!

1. Rapture: Christ coming FOR His church. Pastor Gregg listed several reasons why he thinks the rapture will come before the tribulation and 2nd coming. This can happen at any time. We will rise up and meet him in the clouds.

2. Tribulation: 7 years of chaos on the world- anti-christ, dying for your faith

3. 2nd Coming: He comes down WITH his church.

4. Millenium: 1,000 year reign of Christ on Earth with His people.

5. Eternity: New heaven and earth for believers. Hell for unbelievers.

I am still trying to figure all of this out. I don't understand it all. Hopefully next Sunday, the last series will clear up some of my confusions. I would also like to study it some more this week. What I do think, is that I don't really need to understand it. All I need to know is that I am a believer and will be a part of the Rapture. I know I do not want to be on Earth during the Tribulation. Now I just need to live my life so that I have something to bring with me to the throne.

Chocolate Espresso Cake

So I tried out a new dessert and it was delicious! It is similar to Chili's molten chocolate lava cake, creamy on the inside!

Ingredients:
2 TBSP of unsalted butter, extra for ramekins
1/3 cup of confectioners sugar, extra for ramekins
2 oz. semisweet chocolate
1 large egg
1 large egg yolk
1 TSP espresso powder
pinch of salt
3 TBSP of flour

1. Prehead oven to 400 degrees.
2. Butter 2 5-7 oz. ramekins and dust with confectioners sugar.
3. Place unsalted butter and semisweet chocolate in microwave. Heat for 20 second increments, stirring each time. Let cool slightly.
4. Whisk egg, egg yolk, espresso, and salt.
5. Add chocolate. Whisk to combine. Add flour. Whisk to combine. Do not over whisk. Pour into ramekins.
6. Bake 9-12 minutes. Insert toothpick near edge, it should come out clean. Insert toothpick in center, it should come out wet.
7. Let cool for 10 minutes. Serve immediately after. Dust with confectioners sugar on top.

New to this....

So after reading other people's blogs for weeks, I decided I would create my own. Not really counting on anyone reading it, but that's ok! It gives me something to do! Wes thinks I am crazy for doing it and told me that I already have a blog, facebook. Speaking of Wes, he is currently waiting on me to watch a movie. So my first post will have to be a short one! Adios!

About Me

This is pretty old- so are the pictures  I haven't updated this blog in several years.

I am a single 20 something teacher in Baton Rouge. *update- not in my 20's anymore!  I love to shop, decorate, cook, work with children, and hang out with friends. I graduated from LSU and I LOVE to watch football. I will watch almost any college football game, but obviously love my tigers! I love to hang out with my family. I hope to have my own family one day. I always said I wanted 6 kids- 3 girls and 3 boys. As the years go by, that number is slowly decreasing.   I was always jealous of my friends that had big families and were so close to each other. I am trying to get more involved in church and get closer to God each day. My favorite verse is Jeremiah 29:11 which gives me hope whenever I am having a bad time in my life.

I am not a chef. I am not a fashionista. I am not a star on HGTV. I am not a photographer.  I am not a foodie. I am not an athlete. I am not a nutritionist. However, from time to time, I will blog about all of the above things because this is my blog and I can!

You might learn a little bit more on this post if I ever finish it!

Above is a picture from skiing in Beaver Creek. I am not a skier. This picture was taken the ONE time I went down the mountain. When I got down, I was done! On the way up while in the ski lift, I dropped my pole. I about had a panic attack! Seriously......

Above is me and my best friend since kindergarten when we took a girls trip to Los Angeles. We love to take trips, just the two of us. We went to New York City one year and LA the next year. We are currently planning our next trip. We are thinking Charleston.....the city where I dream of living....but have never been!

This is me and same best friend on her wedding day July 18, 2009.

Above is my nephew Brady. He will be 2 in September 2011. He is so cute and at such a fun age!

These are my babies- Sophie and Maggie. Yes, Maggie tilts her head for most, if not all pictures! This tilt is nothing compared to most! Sophie is 6 and Maggie is 1.

Welcome to my life!!! Hang around and stay for awhile! You might find it incredibly boring most days!
