Chicken Cheesy Spaghetti

So I found Pioneer Woman's blog recently and fell head over heels in love. I have literally spent hours reading her recipes, her photography tips, etc. So I decided to try 1 of her recipes, I am sure the first of many. I started with her chicken spaghetti recipe.

I started with my ingredients: a cut up fryer (except i had a whole fryer that I had to cut up), thin spaghetti, 1 onion, 1 bell pepper, 1 4 oz. jar of pimentos, 3 cups of sharp cheddar cheese, 2 cans of cream of mushroom soup, red pepper, black pepper, Lawry's seasoned salt.

Then I cleaned my chicken, got a big pot, filled it with water and let the water boil. I put the chicken in the pot for about 30-45 minutes.

Here is my chicken boiling. I let it boil for a couple of minutes and turned it down to low.

I cut up my onion, bell pepper, and drained my pimentos and put them aside.

I broke the spaghetti into 2 inch pieces and used about 3 cups.

When the chicken was done, I took about 2 cups, maybe a little more broth from the pot to save for later.

I took the chicken out and set on a plate to cool. I turned the heat on the stove up to high to boil the leftover broth for the noodles.

Once the broth was boiling, I poured the noodles into the pot.

I tore apart the chicken so it is somewhat shredded into bite size pieces. I let the noodles cook for about 4 or so minutes. I drained them and poured them into a large mixing bowl. Then I became an idiot and stuck my hand in the noodles to see if they were cool. They werent. So then I had to race to the sink and put cold water on my hand.

Now my hand is better so I put all of the ingredients into this bowl picture above and mixed them with a spoon. I then put 2 cups of cheese into the bowl and stirred it all together again.

I poured the finished product into this foil pan and sprinkled 3/4 cup of cheese on top.

I put some of the spaghetti mixture into this foil pan to go into the freezer for another day at another time, maybe when my hand is not still burning. I sprinkled 1/4 cup of cheese on top of this one.

I put the small one in the freezer. I plan to bake the bigger one tonight for dinner. 350 degrees for about 40 minutes. I plan to serve a side salad and some garlic bread. I will let you know how it tastes. For a more detailed recipe as well as one that can be printed out, feel free to browse pioneer woman's blog.

Lose 1, Gain another

I had to say goodbye to my sweet Sophie on Friday....

Since we are going to Cancun, she will be in Lafayette until I go back for Michal's wedding. I know that she is not very happy with me right now.

According to my mom, she is doing a lot of this......
in hopes that I will be there soon...............

But another dog did come to keep my company this weekend.....

Leslie's dog, Paco

He is taking Sophie's spot in my bed....
Now he is like, if you take one more picture, I am going to kill you!But I did it anyway.........

Movie Time
On a side note, I have seen 3 movies in the past week. We saw the Hangover, the Proposal, and My Sister's Keeper. I think my favorite was the Proposal. It was cute and funny. My Sister's Keeper was sad, but I managed to not cry. My eyes watered up a little bit, but I never shed a tear! I am looking forward to seeing The Ugly Truth in July and Love Happens in September.

I rented the Shopaholic movie. I wasn't thoroughly impressed, but it gave me something to do.

Book Time
I am currently reading Atlas Shrugged after Wes has begged me to for almost 2 years now.

I am also reading The Five Love Languages Singles Edition. Well I should say that I was reading it. I haven't picked it up in awhile, but it was rather interesting to hear about the 5 love languages. There are editions for you married folk as well. There is also a bible study by the same author called The Marriage You Have Always Wanted. Check it out now the funk soul brother

Lazy dog and bachelorette fun!

Doesn't she just look so peaceful! Dogs have it so great!!

Well I haven't written in awhile since I have been out of town so much. I just got back from Michal's bachelorette party which was in Perdido Key/Pensacola area. We had a lot of fun. Unfortunately I forgot my camera battery charger in Florida so I cannot upload any pictures at the time! We stayed at the Windemere. About 14 girls went so we had 2 condos. We spent most of our time hanging out on the beach or in the condos at night, but did make it out to the Florabama on our last night there. I think Michal really enjoyed the weekend, which is what mattered. Now it's exactly one month until the wedding!!!

14 days till Wes and I are off to Cancun!! We are going with some other friends and staying at Moon Palace. We are very excited and cannot wait! We cannot decide what other things (i dont think the website is working correctly) we want to do while we are there. We are thinking about doing an ATV tour and possibly snorkeling. We have heard that swimming with the dolphins is always a rip off. I wish I knew someone that had done some of the extra tours so I could get some advice!

Today, I got to see Erin's new cute house and had lunch with her at Panera Bread. We had a good time and are both looking forward to LSU baseball tomorrow!

I am a single 20 something teacher in Charleston. I love to shop, decorate, cook, work with children, hang out with friends, and do anything in/on the water. Living near the beach definitely has its perks! I graduated from LSU and I LOVE to watch football. I will watch almost any college football game, but obviously love my tigers! I love to hang out with my family and hope to have my own one day.
